Start Iteration on "x" is not respected

We experienced that on some of our projects, the Start Iteration on “Monday” is not being respected, even when it’s set in project settings.

We have it set for Monday, and on some of the projects, it’s being displayed from Tuesday.
In the backlog, it appears to be correct.
